A Welsh National Treasure – Welsh Cake Recipe

Today the Scandinavians celebrate something called ”International Cinnamon Bun Day” which in Wales would probably translate into a ”Welsh Cake Day”. Welsh Cakes are also known as bakestones within Wales because they are traditionally cooked on a bakestone (Welsh: maen), a cast iron griddle. These treats can be enjoyed with your afternoon tea whatever the time of year and they always manage to create that warm feeling in your gut. We haven’t heard of an Official Welsh Cake Day but do we really need one in order to bake these little goodies? We think not, so here is a Welsh cake recipe from Visit Wales website that we tried out, and my my they were tasty!

What you will need:

225g/8oz plain flour

100g/4oz butter

75g/3oz caster sugar

50g/2oz currants (but can be left out if not a big fan)

½tsp baking powder

¼tsp mixed spice (or just cinnamon)

1 egg

A pinch salt

A little milk to bind

 

 

Instructions:

1. Sift the dry ingredients (flour, baking powder, mixed spice) together into a mixing bowl. Rub the cut up butter into the flour. Stir in the sugar and fruit (if using), pour in the egg and mix to form a dough, using some milk if the mixture is a little dry. Roll the dough out on a lightly floured surface to about the thickness of a biscuit. Use a pastry cutter to cut out rounds. You can buy special cookie cutters in different shapes, such as heart shaped ones!

2. Cook the cakes on a greased bake stone or griddle until golden. The heat shouldn’t bee too high for the surface and inside of the cakes should cook at the same time and the surface might burn if it gets too hot. Once cooked sprinkle with caster sugar and serve with butter.

3. To make them extra special, you can also add grated orange or lemon rind, mixed fruit or tropical fruit. But as not all are fans of dried fruit in their cakes and scones, these can be left out too. The ones with an extra sweet tooth can have their welsh cakes with jam.
